Why Raw Carrot Salad?

Through my journey of infertility due to endometriosis, I discovered Dr. Ray Peat's raw carrot salad, which offers several health benefits. The most important one I found is its ability to bind excess estrogen and safely excrete it from the body. Excess estrogen is a common issue for many women.

Dr. Peat suggests that this salad helps cleanse the intestines, preventing the liver from becoming overloaded with toxins. The liver is responsible for detoxifying excess estrogen. The raw carrot salad can also prevent the re-absorption of estrogen and improve digestion. Plus, it has anti-fungal and anti-bacterial properties!

You’ll Need:

  • 2 medium carrots (shredded)

  • 1-2 tablespoons Organic Apple Cider Vinegar (with the mother)

  • 1-2 tablespoons coconut oil (or 1/2 teaspoon MCT oil)

  • Salt to taste

  • A little bit of fresh lemon juice (optional)

Method:

  1. Shred the carrots and place them in a bowl.

  2. Add apple cider vinegar and coconut oil (or MCT oil).

  3. Season with salt to taste and mix well.

  4. Optional: Add fresh lemon juice for extra flavor.

  5. If you're a busy mum like me, shred a big batch of carrots at the start of the week and keep it ready for snacks anytime!
