PUMPKIN SOUP
Super Easy & Nutritious Vegetable Soup
You'll Need:
2kg peeled pumpkin
400g sweet potato
200g broccoli
200g zucchini
2-3 carrots
1 brown onion
2 tablespoons vegetable or chicken stock
Method:
Chop all the vegetables and place them into a large pot.
Add the stock and fill the pot with water just enough to cover the vegetables.
Cook until the vegetables are soft (but don’t overcook them).
Drain the liquid into a large bowl and set it aside.
Place all cooked vegetables into a food processor and puree them.
Return the pureed vegetables to the pot and bring to a boil.
Add the reserved liquid gradually to achieve your desired soup consistency.
Season with salt and pepper to taste.
Optional:
Add German Knackwurst for extra flavor.
Pair with freshly baked bread to dip into the soup.
Tip:
My rule for this soup is simple: 80% pumpkin, and the remaining 20% can be any veggies you prefer.
