A Kids’ Favourite Pancake Recipe

You'll Need:

  • 1 cup gluten-free flour

  • 1/2 cup almond meal

  • 1/2 cup hazelnut meal

  • 2 eggs

  • 1 3/4 cups milk

  • 1 teaspoon cinnamon

  • 2 teaspoons pure organic vanilla extract

  • 1/4 teaspoon xanthan gum

  • 1/4 cup sugar

  • Optional: 2 tablespoons Hydrolysed Collagen Peptides

Method:

  1. Beat the eggs in a bowl until stiff and foamy. Add the sugar and mix well.

  2. In a separate bowl, combine the gluten-free flour, almond meal, hazelnut meal, cinnamon, vanilla extract, xanthan gum, and protein powder. Add the milk and mix to combine.

  3. Stir the wet mixture into the beaten eggs until smooth and consistent.

  4. Heat a frying pan and add a little butter. Spoon the pancake mix into the pan, cooking each side until golden brown.

  5. Serve with pure maple syrup and fresh fruit on top.
