NO CHILLI CON CARNE
A Twist on a Classic: Mild and Delicious
Our boy would always say, "No spice please!" So here's a twist on a very popular recipe, perfect for the whole family.
You will need:
500g grass-fed minced beef
1 large brown onion
2 garlic cloves
1 can diced tomatoes
1 can red kidney beans
1 litre beef stock
4 tbsp Paprika (Sweet Hungarian Style)
2 tbsp tomato paste
1 tbsp olive oil
Salt & pepper to taste
2 cups of basmati rice (can also use brown rice)
Method:
Cook rice: Prepare your rice as per package instructions.
Prepare the sauce:
Pour olive oil into a large pot.
Add chopped onion and garlic. Cook until softened.
Add minced beef to the pot and stir until browned.
Simmer:
Add beef stock, diced tomatoes, kidney beans (reserve for later), paprika, tomato paste, salt, and pepper to the pot.
Let it simmer for 45 minutes.
Final touches:
Taste and adjust salt and pepper as needed.
Add drained kidney beans and simmer for an additional 10 minutes.
Serve:
Place cooked rice in a serving bowl and top with the beef mixture.
Optional: Sprinkle a little parsley for garnish.
