NO CHILLI CON CARNE

A Twist on a Classic: Mild and Delicious

Our boy would always say, "No spice please!" So here's a twist on a very popular recipe, perfect for the whole family.

You will need:

  • 500g grass-fed minced beef

  • 1 large brown onion

  • 2 garlic cloves

  • 1 can diced tomatoes

  • 1 can red kidney beans

  • 1 litre beef stock

  • 4 tbsp Paprika (Sweet Hungarian Style)

  • 2 tbsp tomato paste

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 2 cups of basmati rice (can also use brown rice)

Method:

  1. Cook rice: Prepare your rice as per package instructions.

  2. Prepare the sauce:

    • Pour olive oil into a large pot.

    • Add chopped onion and garlic. Cook until softened.

    • Add minced beef to the pot and stir until browned.

  3. Simmer:

    • Add beef stock, diced tomatoes, kidney beans (reserve for later), paprika, tomato paste, salt, and pepper to the pot.

    • Let it simmer for 45 minutes.

  4. Final touches:

    • Taste and adjust salt and pepper as needed.

    • Add drained kidney beans and simmer for an additional 10 minutes.

  5. Serve:

    • Place cooked rice in a serving bowl and top with the beef mixture.

    • Optional: Sprinkle a little parsley for garnish.
