EASY CHOCOLATE CAKE

Decadent Dark Chocolate Cake (No Need to Cut Out Your Favorites!)

Who says managing your weight means cutting out all your favorite treats? You can still enjoy chocolate—just opt for high-quality dark chocolate like Lindt!

Ingredients:

  • 150g dark (85%) Lindt chocolate

  • 150g butter (I use raw butter)

  • 2 tbsp cocoa powder

  • 100g almond meal

  • 6 eggs

  • 1 cup caster sugar

  • 1 tbsp pure vanilla bean extract

Method:

  1. Preheat your oven to 180°C (356°F).

  2. In a pot over low heat, melt the chocolate and butter together. Once fully melted, allow it to cool.

  3. In a mixing bowl, beat the eggs until stiff.

  4. Gradually add the caster sugar and continue beating until dissolved.

  5. Stir in the vanilla bean extract and cooled chocolate mixture.

  6. Gently fold in the almond meal and cocoa powder.

  7. Pour the mixture into a 20 x 5cm (8 x 2in) round cake pan.

  8. Bake for 50-55 minutes, or until a skewer comes out clean.
