Christmas Mango Gummies with Coconut Base

Ingredients:

  • For Mango Gummies:

    • 250ml fresh fruit juice (seeds strained)

    • 100g raw honey

    • 1/3 cup fresh lemon juice

    • 5 tbsp gelatin (I used Great Lakes Beef Gelatin)

    • 2 tbsp cold water

  • Optional Coconut Base for Gummies:

    • 1.5 cups coconut milk

    • 2 tbsp gelatin

    • 1 tbsp vanilla extract

    • 1 tsp cinnamon

    • 2 tbsp sugar or honey

Method:

  1. For Mango Gummies:

    • Dissolve the gelatin in the cold water, then add half of the mango juice to the gelatin mixture.

    • In a saucepan, heat the remaining juice, honey, and lemon juice over low heat.

    • Add the gelatin mixture to the saucepan, stirring until fully dissolved.

    • Pour the mixture into silicone molds and refrigerate to set.

  2. For Coconut Base:

    • Dissolve 2 tbsp gelatin in half a cup of cold coconut milk.

    • In a separate saucepan, heat the remaining coconut milk, vanilla extract, cinnamon, and sugar (or honey) over low heat.

    • Add the gelatin mixture to the saucepan and stir until fully dissolved.

    • Pour the coconut mixture over the set mango gummies in the molds.

    • Refrigerate again until fully set.

Once set, your gummies should be ready to enjoy! These will add a tropical touch to your holiday celebrations with the delicious mix of mango and coconut flavors
