BEEF CASSEROLE
Slow Cooker Beef Stew
The perfect dish for your slow cooker! Just set it and forget it, and it'll be ready for dinner.
What you'll need:
1kg grass-fed beef (I used topside for a super soft result)
1 large onion
2 cloves garlic
2 tbsp ghee
1/4 cup tapioca flour, well seasoned with salt and pepper
4 large carrots
400g diced tomatoes
300ml beef broth (or stock)
1 small sweet potato
5 potatoes
Method:
Cut the beef into large pieces and toss them in the seasoned tapioca flour.
In a pot, heat the ghee and sear the beef until browned. Once seared, remove the beef from the pot and set aside.
Add the onion and garlic to the pot and cook until softened.
Return all the beef to the pot, add red wine (optional), and simmer until the wine reduces.
Add 3 carrots (cut into large pieces), diced tomatoes, beef broth, and salt and pepper.
Cover with the lid and slow cook for 4 hours.
For the mashed potatoes: Peel and chop 4-5 potatoes (depending on servings), 1 small sweet potato (around 400g), and 1 carrot. Add salt and cook until tender.
Once cooked, mash and add a little raw milk and grass-fed butter for creaminess.
This recipe easily serves 4 people.
