BANANA BREAD

Banana Bread Recipe

No banana goes to waste in this household. Freeze overripe bananas and save them for banana bread when you're ready.

Ingredients:

  • 3-4 ripe bananas (the riper/darker, the better)

  • 1 3/4 cups gluten-free flour

  • 2 eggs

  • 1/2 cup raw honey

  • 2 tbsp coconut oil

  • 1/2 tsp cinnamon

  • 1 tbsp pure vanilla extract

  • 1/4 cup milk

  • 1 tsp baking soda

Method:

  1. In a large bowl, beat together honey and coconut oil.

  2. Add eggs and beat until well combined.

  3. Stir in mashed bananas, then add cinnamon, vanilla extract, and milk.

  4. Stir in the gluten-free flour until fully combined.

  5. Dissolve baking soda in a tablespoon of hot water, then stir into the batter.

  6. Pour the mixture into a loaf pan lined with baking paper.

  7. Bake at 170°C (340°F) for 55-60 minutes.
