BANANA BREAD
Banana Bread Recipe
No banana goes to waste in this household. Freeze overripe bananas and save them for banana bread when you're ready.
Ingredients:
3-4 ripe bananas (the riper/darker, the better)
1 3/4 cups gluten-free flour
2 eggs
1/2 cup raw honey
2 tbsp coconut oil
1/2 tsp cinnamon
1 tbsp pure vanilla extract
1/4 cup milk
1 tsp baking soda
Method:
In a large bowl, beat together honey and coconut oil.
Add eggs and beat until well combined.
Stir in mashed bananas, then add cinnamon, vanilla extract, and milk.
Stir in the gluten-free flour until fully combined.
Dissolve baking soda in a tablespoon of hot water, then stir into the batter.
Pour the mixture into a loaf pan lined with baking paper.
Bake at 170°C (340°F) for 55-60 minutes.
